Thanks to you, Sara Akita Shirakami will celebrate its 26th anniversary in 2021. I would like to express my sincere gratitude for the support and patronage of many people.

Since our founding in 1995, we have been making "bread for loved ones".
The recipes and manufacturing methods of bread that founder Setsuko Otsuka made for her family, as well as their thoughts, are still carefully passed down by young craftsmen.

While imagining the smiles of the people who eat them, each one is carefully handmade with all my heart.

In recent years, with the increase in the number of elderly people and dual-income households, there has been a demand for even greater ease of bread and health consciousness. We also use advanced flash freezing technology to successfully fresh-freeze freshly baked additive-free bread. In the future, based on customer requests, we will further refine our refrigeration technology and establish a unique position in the frozen bread market.

Sala's bread will be on the table every day, and we will make safe, secure, and delicious healthy bread with the hope that everyone can spend their time with a healthy smile.

What Sara Akita Shirakami values most is her love for the customers who eat it.
The origin of this is the unique manufacturing method created by founder Setsuko Otsuka for her precious family, "subtraction bread making".
Thinking about the smiles of the customers who eat it, we make bread with love.
Even now, that feeling is cherished in our hearts.

What is "subtraction bread making"?

A manufacturing method that uses the minimum necessary ingredients to bring out the maximum deliciousness of the ingredients.
Not only in the recipe, but also in the manufacturing process, we do not use any unnecessary food additives or other unnecessary things.

What is "Sala"?

New things",It is derived from "massara", which means "pure thing".

We would like to stick to Sarah's original intention of being pure and unadulterated, and provide products that are chosen not only in Japan but also overseas with deliciousness and peace of mind.

History of sala

A word from a dear friend of mine inspired me to make my own natural yeast bread.
The bread, which spared no effort in its special ingredients and time, soon spread to friends and acquaintances and became eager to sell it, and in November 1995, "Sarah Bread House" was born, which built a log house in the garden of her home and baked bread for her precious family and friends.

Sarah means "new", "unadulterated", and "pure", and it means a bakery that bakes pure bread without mixing, so I named it "Sarah Breadhouse".

Later, on May 25, 1999, in the evening edition of the Asahi Shimbun, I came across "Shirakami Kodama Yeast", which was a property of Akita Prefecture and was said to be out of the prefecture.

After a year and a half of negotiations with the prefecture and joint research with Dr. Keitaro Takahashi and Dr. Kenkichi Kodama of the Akita Prefectural Food Research Institute, in order to convey the bread making of Shirakami Kodama yeast to many people, the Akita Prefectural Food Research Institute commissioned the "Shirakami Kodama Yeast Technical Advisor" in 2001.

Also in March 2001, the bread workshop in Hachioji City, Tokyo was renovated as Japan's first Shirakami Kodama yeast bread specialty store "Sarah Bread House", and in September, "Sara Bread House Akita" opened in Akita City, Akita Prefecture as an antenna shop for Shirakami Kodama yeast bread.

Bread making that takes advantage of the extraordinary characteristics of Shirakami Kodama yeast is "subtraction bread making" that is based on domestic wheat, Shirakami Kodama yeast, domestic millet sugar, and natural salt, and does not use any extras. The thorough bread making, which does not use peeling oil even on the baking sheet or food mold, is the same as the baking method used for precious family and friends.

After encountering Shirakami Kodama Yeast and being able to deliver bread with a soft and soft natural sweetness to everyone, I feel more and more proud as a "Sarah" every day.

Initiatives in the Shirakami Mountains

In order to protect the rich forests and clean water of the Shirakami Mountains, Sala Akita Shirakami donates a portion of the proceeds from the sale of Shirakami Kodama yeast to organizations that protect the natural environment of the Shirakami Mountains.

By participating in the beech seedling planting festival, maintaining forest paths, and interacting with local people, we aim to learn about the culture and people's lives rooted in the area and make use of them today. Tours to the Shirakami Mountains are attended by people from all over the country.
