Shirakami Kodama yeast is a yeast used in baking found in the Shirakami Mountains, a World Natural Heritage Site. Through joint research by Dr. Kenkichi Kodama and the Akita Prefectural Food Research Center, among the approximately 500 plants isolated from the collected humus, "those with strong fermentation power", "strong propagation power", and "fragrant ones"... I made a selection, and finally only the last plant remained. That was Shirakami Echo Yeast.

In response to the passionate desire of Dr. Kenkichi Kodama, the discoverer of Shirakami Kodama yeast, the founder, Setsuko Otsuka, has pursued her own method of "subtraction bread making" in order to bring out the rich taste and aroma of Shirakami Kodama yeast to the fullest.

In 2001, he was certified as a technical advisor by Akita Prefecture for completing an original recipe that brought out the characteristics of Shirakami Kodama Yeast and was highly praised for his technology.

With the desire to "make safe and delicious bread easily at home", in 2002, he published the country's first Shirakami Kodama yeast recipe book "Baking bread with Shirakami Kodama yeast" (author: Setsuko Otsuka, publisher: Agricultural and Cultural Association), and in the same year, he opened a sala bread class ahead of the rest of the country.
